CONCESSION PROCEDURES – CLOSING THE CONCESSION STAND

(Be sure to follow these instructions carefully, as to not be charged a cleaning/re-stocking fee to be deducted from your concessions payment)

1. Remove the end-of-shift checklist from the cash box and follow the list as you close the stand. Be sure to complete each task on the list according to the instructions below.
2. Unplug the nacho cheese dispenser and clean by wiping with a damp disposable dish cloth. Remove the cheese bag, clamp the hose with a binder clip, and place it on the counter while cleaning the concession booth. This will help to bring the temperature down.
3. Restock the candy baskets neatly, and leave on the counter. Place the boxes used to store candy back into the labeled candy cabinets. Please put them in the proper location.
4. Unplug, empty, and clean the coffee maker.
5. Unplug the roaster oven. Place any unsold pretzels into the cooler, but ONLY those pretzels that have been heated once. Do not put any pretzels back into the cooler that were originally pulled from the cooler to warm and sell. They can only be reheated once for food safety reasons. Do not save any hot dogs that may still be in the roaster oven, they must be thrown into the trash. Throw away any unsold pizza from the pizza warmer.
   1. Clean the hot dog griller using a green scouring pad, located beneath the sink, and water. If it is especially dirty, you may use the spray vinegar and water solution to help facilitate cleaning. Pull the drip tray out and wash in soapy water in the sink. Unplug the griller when finished.
   2. Wipe out the inside and outside of the pizza warmer with a damp cloth that has been sprayed with the vinegar solution.
   3. Clean all popcorn out of the popcorn machine at the end of the event. Remove the plastic guard from the front of the machine, and using the vinegar and water solution in the spray bottle under the sink, clean the inside of the machine (including the inside clear plastic walls). Remove the center tray by pulling it outward, empty any popcorn/kernels, wash and replace. Return bags, popcorn salt, and blue cup to their proper places. Wash the plastic guard from the front of the machine, and replace it.
   4. Wipe down counters, sinks, and condiment areas.
   5. Sweep the concession stand.
   6. Restock the beverage coolers. Be sure that all slots are full with the correct beverage. Generally, each slot will hold 7 bottles. Be sure to rotate the oldest product to the front. All bottles must be rotated to ensure that the oldest product is used first, preventing the sale of expired product. Use the beverages in the back cooler first to restock. When finished, be sure that there is at least one full case of each type of beverage placed into the back cooler for the next event.
   7. Remove the yellow signs from the vending machines and leave on the counter inside the concession stand.
   8. Bring the folding concession stand sign into the concession stand from the gym/pool hallway.
   9. Fill out the inventory sheet found in the cash box. This is how we know what to replenish prior to the next event.
   10. Two adults should count money and fill out cash verification sheet (both sides) located in the cash box. Write the number of pizzas delivered on the cash verification sheet (the receipts for the pizzas should also be placed in the cash box). When done counting the drawer, put the cash tray in the cash box, along with the closing checklist and completed inventory sheet, and LOCK it using the combination lock located in the cash box or the tray. Place it on or under the counter.
   11. Place the cooled bag of nacho cheese into the cooler.
